Hokkaido is known as the Kingdom of Food!

Hokkaido covers an area one-fifth the size of Japan, has more than ten airports, and has a diverse food culture.
All of the rice used for sake brewing is 100% grown in Hokkaido.
It is a challenge to brew sake that only the "Kingdom of Food" is allowed to do.
In 2016, at the foot of the Taisetsu Mountains, Kamikawataisetsu Brewery was established in Kamikawa town, Kamikawa-gun, Hokkaido, where winters can reach minus 20 degrees Celsius, there is an abundance of natural water and huge farmland
and the Sounkyo Hot Springs, which are visited by about 2 million people annually.
In 2020, they opened a sake brewery in Tokachi, and in 2021, a sake brewery in Hakodate, where there have never been to build sake breweries before, aiming to make sake that is loved by the local people.

Kamikawataisetsu where they go

Sake is made by excellent brands of sake brewing rice produced in specific regions.
However, Kamikawataisetsu is committed to producing locally produced sake from rice suitable for sake brewing produced in only Hokkaido and high quality natural water collected locally.
They will spread Hokkaido's regional brand to the whole country and Made in Japan to the world. The pentagonal shape of the family crest is based on the design motif of the "Dai" character of Mount Taisetsu, very beautiful snow, and Ainu patterns.
The design motif is based on the five tastes of sake: sweet, sour, spicy, bitter, and astringent.
They will continue to brew delicious sake for the next fifty to a hundred years. It is a symbol of a sake brewery that will brew delicious sake for the next fifty to a hundred years, and will be loved and passed down in the community.

The raw materials for sake brewing are clean water and dericious rice.

The brewing water comes from a spring in the Taisetsu Mountains, which are covered with snow for many years, and is naturally heated to about 7 degrees Celsius, ideal for sake brewing.
For sake rice, we use three types of rice grown in Hokkaido that are suitable for sake brewing: Suisei, Ginpu, and Kitashizuku, which are produced by producers we trust.
Kamikawa Daisetsu Brewery only brews Junmai sake.
They make Junmai, Junmai Ginjo, and Junmai Daiginjo.
Without the use of large brewing tanks, each bottle is carefully brewed by hand using traditional methods to produce high quality sake.
Not extreme, but just plain delicious sake. Definitely, they aim to make sake that more people will be happy with.
